
08 Mar Racking the 2015 Pinot Noir
The 2015 Pinots have been gently moved from barrel and are now resting comfortably in tank and waiting for our bottling day. Only 75 cases of the 2015 Fairsing Vineyard Pinot Noir will be produced and just 200 cases of the 2015 Timothy Pinot Noir will be bottled. Both wines are showing beautifully, even in tank, and we’re really excited to release these wines for you on Memorial Day.
The Fairsing has intensity, focus, and ample structure to let this wine age for years. Aromas of cherry, clove, allspice, and nutmeg all evolve into flavors of black cherry, raspberry, and cola. The Timothy is our flagship Pinot and it’s a cuvee’ of both Fairsing and Monks Gate Vineyard. Several clones make up the final Timothy blend: Dijon 777, 667, 115, and Wadenswil 1A. It has wonderful flavors of blueberry, cherry, and clove with a silky and approachable texture.
We plan on bottling on the 15th and then moving the finished cases to our warehouse in McMinnville for storage. We can’t wait to share these wines with all you!
